Thibault Soyer is the young and energetic winemaker and proprietor of Marcel Moineaux. Based in Chouilly, a village located in the Chardonnay dominated department of the Cote de Blancs in Champagne.
He makes chalky, fresh Champagnes using 100% stainless steel, full malo-lactic fermentation, 40% reserve wines (for the NV), 3-7 gram per litre dosage and ages the wine for 3 years on its lees for the NV.
His vines cover 6.4ha completely within the village of Chouilly and all with favourable exposure. The soils are 80-90% chalk with the remainder made up of Clay. He has practiced sustainable viticulture for many years.
